Cooking instructions

  • Preheat the oven to 400°F.

  • Coat a baking sheet with cooking spray and spread tortilla strips in an equal layer. 12 to 15 minutes, or until browned and crispy.

  • Heat oil in a large saucepan keeping heat to medium

  • Add the peppers and onion and stir occasionally for 3 to 5 minutes

  • Add cumin and stir

  • Add the diced tomatoes with green chillies along with the juice and the chicken broth soup

  • Bring to boil and simmer for 15 minutes

  • Remove from heat and add lime juice

  • Add tortilla strips, cilantro and cheddar to each serving
