- 1 pound boneless, skinless chicken thighs, cut into 1-inch pieces
- 4 cups low sodium canned chicken broth soup
- 1 can chopped tomatoes with green chilies,
- 2 teaspoons lime juice
- 1/2 cup shredded sharp Cheddar
- 1/4 fresh cilantro, chopped
Cooking instructions
- Preheat the oven to 400°F.
- Coat a baking sheet with cooking spray and spread tortilla strips in an equal layer. 12 to 15 minutes, or until browned and crispy.
- Heat oil in a large saucepan keeping heat to medium
- Add the peppers and onion and stir occasionally for 3 to 5 minutes
- Add cumin and stir
- Add the diced tomatoes with green chillies along with the juice and the chicken broth soup
- Bring to boil and simmer for 15 minutes
- Remove from heat and add lime juice
- Add tortilla strips, cilantro and cheddar to each serving
