Chicken Gumbo soup recipe
- 5 lb chicken shredded
- 2 medium onions diced
- 7 garlic cloves crushed
- 6 celery stalks diced
- 3-4 medium sized carrots diced
- 2 bay leaves
- 3 tsp thyme
- 2 tsp marjoram
- 1 32 oz can of chicken broth
- 8 cups water to cover the chicken
- 2 28 oz cans whole tomatoes
- 1/2 cup brown rice
- 2 lbs frozen/fresh cut okra
- salt & pepper to taste
- gumbo filé to taste
Procedure
- In a 12-16 quart stockpot place the first 10 ingredients and bring to a boil over high heat. Once boiling, lower heat to medium/low and simmer for 2 hours or until chicken begins to fall off the bone.
- Debone chicken once cool enough to handle. Wash rice and add to the stockpot along with tomatoes and juice. Simmer until rice is tender, approximately 40 mins. Once rice is done add the chicken and okra. Let it boil slowly and simmer for about 10 minutes. Add salt and pepper to taste.
- If you want you can Sprinkle on gumbo filé to taste after serving.
