Ingredients

  • all-purpose flour- ½ cup

  • cold chicken stock-1-quart

  • heavy cream-⅓ cup

  • salt and ground white pepper to taste

  • 1 pinch cayenne pepper
     

Method

  • Melt butter in a saucepan over low medium heat

  • Add flour and whisk for 10 to 12 minutes

  • Whisk in the chilled stock gently. Turn down the heat to low.

  • Bring gravy to a boil and simmer, stirring constantly, for 10 to 15 minutes, or until thick enough to coat the back of a spoon.

  • Season with salt, white pepper, and cayenne pepper and stir in heavy cream.
