Baked chicken parmesan recipe

  • Cooking spray

  • 4 chicken breasts, sliced in half lengthwise to make 8

  • 3/4 cup seasoned bread crumbs, you can use whole wheat bread

  • 1/4 cup grated Parmesan cheese

  • 2 tbsp butter, melted (or olive oil)

  • 3/4 cup reduced fat mozzarella cheese,

  • 1 cup marinara or Filetto di Pomodoro

Procedure

  • Preheat the oven to 450 degrees Fahrenheit. Lightly coat a large baking sheet with cooking spray.

  • In a mixing dish, combine breadcrumbs and parmesan cheese. In a separate dish, melt the butter. Brush the chicken lightly with butter before dipping it into the
    breadcrumb mixture. Repeat with the remaining chicken on a baking sheet.


  • Bake for 25 minutes, then lightly spray with additional oil on top.

  • Remove from oven, spread 1 tbsp sauce over each piece of chicken, and top with 1 1/2 tbsp shredded mozzarella cheese

  • Bake for 5 minutes more, or until the cheese has melted
