Chicken-Gruyere Sausages with Spinach-Lentil Salad

Ingredients

  • Fresh parsley

  • baby spinach

  • Onion

  • French green lentils

  • Whole grain mustard

  • Carrots

  • coarse kosher salt

  • Olive oil

  • red wine vinegar

Procedure

  1. Bring lentils, 3 quarts of water, and 11/2 tablespoons salt to a boil in a large pot over high heat, covered. Reduce heat to medium-high and simmer until vegetables are soft, about 20 minutes. Peel carrots and slice crosswise thinly. When the lentils are soft, add the carrots and simmer, slightly covered, for 4-5 minutes. Drain.

  2. Cut the shallots thinly crosswise about 1/4 cup and keep them aside. Cut the parsley leaves and stem and keep them separately.

  3. In a large mixing bowl, combine shallots, parsley stems, mustard, and 2 tablespoons vinegar. add 1/3  cup oil, season with salt and pepper as per taste. Add the drained lentils and carrots to the bowl and gently mix to combine.

  4. In a medium skillet over medium-high heat, heat 1 tablespoon of oil. Cook, until the sausages begin to brown, approximately 3 minutes.

  5. In the same pan, combine sliced shallots, 2 tablespoons of oil, and a sprinkle of salt. Turn the heat down to medium. Cook, turning periodically, for 5-8 minutes, or until sausages are browned and shallots begin to caramlize. Place them on plates.

  6. Add spinach and parsley leaves to lentil salad; mix well and season with salt and pepper to taste. Serve the lentil salad with sliced  sausage and shallots on top. Enjoy your tasty and healthy Chicken-Gruyere Sausages with Spinach-Lentil Salad!
